Ingredients of Sheer Khurma Recipe

  • 100g vermicelli (seviyan)
  • 1-litre full-fat milk
  • 2 tablespoons ghee (clarified butter)
  • 100g sugar (adjust to taste)
  • 1 tablespoon raisins
  • 1 tablespoon chopped dates
  • 4-5 cardamom pods, crushed
  • 1 tablespoon chopped nuts (almonds, pistachios, cashews)
  • A pinch of saffron strands
  • 1 tablespoon rose water
  • Slivered almonds and pistachios for garnish


  • Heat ghee in a heavy-bottomed pan. Add vermicelli and roast until golden brown on medium heat. Keep stirring to avoid burning. Once done, could you remove it from the pan and set it aside?
  • In the same pan, add milk and bring it to a boil. Reduce the heat to low and let it simmer, stirring occasionally.
  • Add sugar, crushed cardamom pods, saffron strands, chopped nuts, raisins, and chopped dates to the simmering milk. Stir well and cook for 10-15 minutes until the milk thickens slightly.
  • Once the milk has thickened, add the roasted vermicelli to the pan. Stir well and let it simmer for another 5-10 minutes until the vermicelli is cooked and the mixture reaches your desired consistency.
  • Turn off the heat and stir in the rose water. Mix well.
  • Transfer the sheer Khurma to serving bowls and garnish with slivered almonds and pistachios.
  • Serve hot or chilled, according to your preference. Enjoy the rich and creamy sheer Khurma!
