Delicious Kabuli Pulao Recipe: A Taste of Afghanistan

Ingredients Of Kabuli Pulao Recipe

  • 2 cups basmati rice
  • 1 large onion, thinly sliced
  • 1/2 cup cooking oil
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup raisins
  • 500g lamb or chicken, cut into chunks
  • 1/2 cup slivered almonds
  • 1/2 teaspoon ground cardamom
  • 1/2 teaspoon ground black pepper
  • Salt to taste
  • 3 cups water or chicken broth
  • 2 carrots, julienned
  • 1/2 cup chopped fresh coriander leaves
  • 1/2 cup chopped fresh mint leaves


  • Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for about 30 minutes, then drain.
  • Heat half of the cooking oil in a large pan over medium heat. Add the sliced onions and cook until they are golden brown and crispy. Remove the onions from the oil and set them on a paper towel-lined plate.
  • Add the remaining oil and the lamb or chicken pieces to the same pan. Cook until browned on all sides.
  • Add the cardamom, cinnamon, black pepper, and salt to the meat. Stir well to combine.
  • Pour in the water or chicken broth and bring to a boil. Reduce the heat to low, cover, and simmer for about 30-40 minutes or until the meat is tender.
  • Heat a tablespoon of oil in a separate pan and add the julienned carrots. Cook until they are slightly softened, then remove from the heat and set aside.
  • Bring water to a boil in a large pot and add the drained rice. Cook the rice until it is about 70-80% done. Drain the rice and set aside.
  • Preheat your oven to 180°C (350°F).
  • In a large ovenproof dish, layer half of the partially cooked rice at the bottom. Sprinkle half of the raisins, almonds, crispy onions, cooked meat, carrots, coriander, and mint over the rice.
  • Repeat the layers with the remaining rice, raisins, almonds, onions, meat, carrots, coriander, and mint.
  • Cover the dish tightly with aluminium foil and bake in the oven for about 30 minutes or until the rice is fully cooked and fluffy.
  • Once cooked, gently fluff the rice with a fork and serve hot, garnished with additional fresh herbs if desired.
